Growing up in Hachioji City, in western Tokyo, food has always played a central role in my life. From elaborate New Year's Day feasts with family to late-night ramen shop hijinks with friends, food facilitated communication and forged connections like nothing else could.

I trained at the Tokyo Sushi Academy and went on to work at a Michelin-rated restaurant in New York's East Village, serving a wide range of Japanese delicacies. But when I came to Columbus to settle down and open my own restaurant, I only had eyes for ramen.

Authentic, made-from-scratch ramen is hard to come by, especially here in the Midwest — and I wanted to bring this unique culinary tradition, rich with Japanese culture and community, to North Market.
